Snežne kepe so sladica, ki je bila nekoč zelo priljubljena v domačih kuhinjah in na nedeljskih mizah.

Pripravljali so jo takrat, ko so bile na voljo osnovne sestavine – jajca, mleko in sladkor – a je kljub preprostosti vedno delovala nekaj posebnega. Zračni beljakovi oblaki, položeni na svilnato vaniljevo kremo, so ustvarjali sladico, ki ni bila težka, temveč nežna in elegantna.

Izvor snežnih kep sega v Francijo, kjer je sladica znana pod imenom œufs à la neige ali île flottante – »plavajoči otok«. Od tam se je razširila po Evropi in se zasidrala tudi v naših krajih, kjer jo poznamo kot snežne kepe ali šnenokle. Danes jo pogosto dojemamo kot nekoliko pozabljeno klasiko, a prav zaradi svoje lahkotnosti in brezčasnega okusa znova pridobiva veljavo.

Po zahtevnosti priprave sodijo snežne kepe med srednje zahtevne sladice. Posebnih kuharskih spretnosti ne zahtevajo, nekaj pozornosti pa je vendarle treba nameniti pravilno stepenemu beljakovemu snegu, nežnemu poširanju in potrpežljivemu kuhanju kreme. Ko se teh korakov lotite mirno in brez hitenja, je rezultat zanesljivo uspešen.

Recept: Snežne kepe z vaniljevo kremo

Sestavine (za približno 4 osebe)

Za snežne kepe

  • 4 beljaki
  • 80 g sladkorja
  • ščepec soli

Za vaniljevo kremo

  • 500 ml mleka
  • 1 vaniljev strok ali kakovosten vaniljev ekstrakt
  • 4 rumenjaki
  • 60 g sladkorja
  • 1 žlica koruznega škroba

Priprava

Beljake s ščepcem soli stepete v mehak sneg. Med nadaljnjim stepanjem postopoma dodajate sladkor, dokler ne dobite čvrste, sijoče mase, ki obdrži obliko.

V širšem loncu segrejete mleko skoraj do vretja. Z žlico ali zajemalko oblikujete večje kepe beljakove mase in jih previdno položite v vroče mleko. Poširate jih približno minuto na vsaki strani, nato jih z lopatko ali penovko poberete iz mleka in odložite na krožnik, da počakajo na postrežbo.

V isto mleko dodate vaniljo in ga ponovno segrejete. V ločeni posodi gladko zmešate rumenjake, sladkor in škrob. Mešanico postopoma zalijete z nekaj vročega mleka, da jo temperirate, nato vse skupaj vrnete v lonec. Ob stalnem mešanju kremo kuhate na zmernem ognju, dokler se ne zgosti v gladko, svilnato teksturo. Pazite, da ne zavre.

Vaniljevo kremo razdelite v skodelice ali globoke krožnike, nanjo položite snežne kepe in sladico postrežete še rahlo toplo ali popolnoma ohlajeno.

Različice in ideje za malo drugačne snežne kepe

  • Če želite sladico nekoliko obogatiti, lahko vaniljevo kremo prelijete z rahlo čokoladno omako iz temne čokolade in smetane, ki lepo poudari sladkost beljakov.
  • Za toplejšo, bolj zimsko noto lahko v kremo dodate ščepec cimeta ali jo pred postrežbo rahlo posujete z mletim cimetom.
  • “Odraslo “različico ustvarite tako, da v vaniljevo kremo ali v mleko za poširanje dodate nekaj kapljic temnega ruma, ki sladici doda globino in prijetno aromo.
