Slivovi cmoki po babičinem receptu: tradicionalna avgustovska sladica

Recept za slivove cmoke, tradicionalno sladico v sezoni domačih sliv, se prenaša iz roda v rod, številni pa se še danes najraje zatečejo k različici, kakršno so pripravljale babice – iz krompirjevega testa, z zrelimi slivami in hrustljavo prepraženimi drobtinami.

Slivovi cmoki so sladica, hkrati pa nasitna domača jed, ki jo marsikdo povezuje z otroštvom in poletnimi počitnicami.

Sestavine

Za testo

  • 1 kg krompirja
  • 250–300 g gladke moke
  • 1 jajce
  • 30 g masla
  • ščepec soli

Za nadev

  • 16 manjših zrelih sliv
  • 16 kock sladkorja (ali približno 2 žlički rjavega sladkorja)

Za posip

  • 100 g masla
  • 180 g drobtin
  • 2–3 žlice sladkorja
  • 1 žlička cimeta

Priprava

Krompir skuhajte v olupku. Še toplega olupite in pretlačite, nato ga pustite, da se nekoliko ohladi.

Dodajte jajce, maslo, sol in moko ter na hitro zgnetite mehko testo. Gnetite le toliko, da se sestavine povežejo.

Slive operite, prerežite in odstranite koščico. V sredino vsake položite kocko sladkorja.

Testo razdelite na 16 enakih delov, vsak kos sploščite, vanj zavijte slivo in oblikujte gladek cmok.

Cmoke kuhajte v rahlo osoljeni vreli vodi. Ko priplavajo na površje, jih kuhajte še približno 5 minut.

Medtem, ko se kuhajo, na maslu zlato prepražite drobtine. rimešajte sladkor in cimet. Kuhane cmoke previdno odcedite in jih povaljajte v toplih drobtinah.

Če vam kakšen cmok ostane, ga naslednji dan na hitro popecite na maslu. Zunanjost postane prijetno hrustljava, notranjost pa ostane mehka in sočna.

Slivove cmoke lahko tudi zamrznete – pred kuhanjem.
