3D natisnjeni zrezki – že v evropskih trgovinah in restavracijah

Izraelsko podjetje Redefine Meat je razvilo patentirano tehnologijo, ki posnema teksturo in okus različnih vrst mesa, ki ga kar natisnejo.

Natisnjeno meso je 95 % bolj trajnostno, bistveno bolj zdravo in stane manj kot govedina, svinjina ali jagnjetina, zagotavljajo proizvajalci.

Built In poroča, da za sam postopek 3D tiskanja mesa znanstveniki odvzamejo vzorčno serijo živalskih matičnih celic, glede na želeno vrsto mesa: govedina, svinjina, jagnjetina, perutnina ali celo ribe.

Te celice so nato podvržene procesu množenja in vitro in se potopijo v serum s hranili v bioreaktorju pod točno določenimi pogoji. V nekaj tednih se te celice množijo, medsebojno delujejo in diferencirajo v maščobne in mišične celice, ki tvorijo t.i. bološko črnilo za tisk – bioink.

Meso iz laboratorija

Nato robotska roka s šobo razdeli to pastozno gojeno mesno nit v finih plasteh eno na drugo. Roka sledi navodilom naložene digitalne datoteke z uporabo programske opreme za računalniško oblikovalno programsko podporo, da posnema pravilno obliko in strukturo predvidenega mesa. 3D-natisnjen mesni material mora biti viskozen, a dovolj čvrst, da lahko ustvari popoln strukturni model natančne vaskularizacije tkiv, odvisno od vrste in kosa mesa.

Tiskani izdelek se nato vrne v drugo fazo inkubacije, ki omogoča, da se matične celice diferencirajo in dozorijo, kot bi v živali. Tu se mišična vlakna v celoti oblikujejo v pravo gostoto, debelino in dolžino. Po še nekaj tednih je meso iz laboratorija pripravljeno za kuhanje ali pečenje in postrežbo.

Povpraševanje po natisnjenem mesu narašča

Redefine Meat trenutno prodaja svoje izdelke na osnovi soje in pšenice v prehrambni industriji v Izraelu in Evropi. V evropskem proizvodnem obratu v mestu Best na Nizozemskem proizvajajo meso za oskrbo vedno več gostinskih in maloprodajnih ponudnikov po Evropi. Kot prednosti navajajo, da so izdelki brez živalskih sestavin ali stranskih produktov, brez gensko spremenjenih organizmov, brez antibiotikov in holesterola.
